Dear Panarians,
Along with promoting my book, this newsletter will be a head-raiser by mentioning my retirement. I am announcing a ‘swan-song’ group of courses in the New Year.
The Baker’s Topic is an esoteric topic which I deal with in my book – that we human bakers have aped nature’s way when we cultivated our breadmaking process.

The Dorset Baker was published in late June. Basically, the book is a manual for becoming a good baker. The reader is helped to understand flour, dough fermentation and dough handling, and the amazing world of sourdough too. Since I love history, it also delves into the origins of wheat and the history of our craft.

These students all bought the book after attending 2-day French with Sourdough course
Retirement Plans
Yes, I’m an old geezer now. Fifty years a baker and brick oven man, 22 years now PANARY has been in Cann Mills, Shaftesbury. Time to hang up the (oven) gloves!
See my Course Calendar to view the courses remaining this year. In the New Year, in February, I shall put on a retirement group of the popular courses. If any of these ‘swan song’ courses book rapidly, I shall set a date soon after to offer it again. These popular ones are:
- 2-day French with Sourdough
- 3-day Going Pro
- 1-day Sourdough
- 1-day French
- 1-day Basic (Beginners)
- 1-day Pizza & Italian
In early October, all these ‘swan song’ courses will go up in CALENDAR when they can be booked.
