London Courses, Bread Angels & Vienna Bread, Wintry conditions

20th February 2015 by Paul Merry

PANARY Student BreadHappy new year to all.

STUDENTS’ BREAD

I often think it would be pleasant to give some Newsletter space to current and ex-students of PANARY, and this time I have done it.

The picture here features the handsome “Agincourt” loaves of John Townshend who came before Xmas to a course followed by several “apprentice” days on my commercial Thursday. Now he has started his micro bakery, Kennington Bakery, where he lives in London.Continue Reading

PANARY in Provence – Residential Craft Course in the South of France

13th August 2014 by Paul Merry

Quick Details

  • 4 day residential craft baking course held in France
  • 5 night’s accommodation
  • meals included
  • £1085 per course participant
  • £600 per non-participant
  • £100 deposit per person required to secure places
  • no singles supplement

I have teamed up with a former PANARY student, Wilson Thorburn, who escaped with his wife Anna from their hectic London life to a calmer routine in Provence by buying a property with a 13-hectare vineyard to offer a residential craft course in rural France. The property is called Domaine l’Ancienne Ecole. With the wine making they have a summer business renting the gites on the property to holiday makers. We are offering three residential baking courses in the Spring and Autumn of 2015.

PANARY in Provence has booked extremely well, and there is only one place are no places left on the first course.

To keep up to such brisk booking demand we are offering a second spring course straight away, hence this first 2015 Spring season has two courses back-to-back. The first course is April 27 – May 2; the second one, taking bookings now, is May 4 – 9. We consider it very reasonably priced at £900 for five nights in Provence, four days of bread making leavened with interesting excursions.

Newsletter 10 – New website, Panary in Provence, Equipment

28th May 2014 by Paul Merry

Dear Panarians,

With this newsletter I wish to crow about two main news items.

First, a new PANARY website is very nearly up there in the ether. This improved site is newsworthy because it will enable the course booking process to be completed entirely online – payment and all in several easy steps.

It will also feature some videos of me demonstrating hand skills on the bench. This is a new venture involving work with a video maker in late May, early June.

With the machinery doing all that course booking work for me I can now spend more time enlivening the site with my posts about craft baking lore and general tips. My book writing research has thrown up some interesting topics that I could tell you about in posts, knowing that these topics will not make it into the final version of my book.Continue Reading
