Not content with the Provence venture creating a newsworthy venue, I have cheerfully accepted another new venue offered in London.
The invitation has come from Panarian Gaye Whitwam, to hold courses in her well-appointed kitchen bakery called “Sticky Mitts Kitchen” in Wallington, South London. We bake in twin domestic ovens, and hand kneading is backed up by a powerful spiral mixer for the bigger doughs.

There is ample parking. For train travellers, it is only a 10 minute walk from Wallington British Rail station, with a direct rail service to London Victoria every half hour. The first course is scheduled for October 25-26, and will be the two-day French with Sourdough. Cost: £350. On the website it has its own category within the two-day courses area.

The yeast trio: fresh, dried and wild. Learn about the different types of yeast in a course that clears up any mystery surrounding yeast, its function in breadmaking, and the wonders of fermentation. Gain confidence about the correct quantity of fresh and dried yeast to use as we make white and brown breads; the use of yeast in pre-ferments and sponges; and finally, enter the other world of wild yeast employed in PANARY leavens used to make wheat sourdough bread (pain au levain) and sourdough rye that is 100% rye.

I have teamed up with a former PANARY student, Wilson Thorburn, who escaped with his wife Anna from their hectic London life to a calmer routine in Provence by buying a property with a 13-hectare vineyard to offer a residential craft course in rural France. The property is called Domaine l’Ancienne Ecole. With the wine making they have a summer business renting the gites on the property to holiday makers. We are offering three residential baking courses in the Spring and Autumn of 2015.
PANARY in Provence has booked extremely well, and there
is only one place are no places left on the first course.
To keep up to such brisk booking demand we are offering a second spring course straight away, hence this first 2015 Spring season has two courses back-to-back. The first course is April 27 – May 2; the second one, taking bookings now, is May 4 – 9. We consider it very reasonably priced at £900 for five nights in Provence, four days of bread making leavened with interesting excursions.
