- Mark’s Bread, Bristol An excellent craft bakery in Southville, Bristol. Mark Newman began his training by attending courses at PANARY. Paul worked with him for a day during his start up phase. Now he is a real artisan baker, making crusty everyday bread and complex sourdoughs
- College Loaf Bakery, Oxfordshire Kate O’Donnell attended PANARY courses and we kept in touch in the run up to her setting out on her own in Oxfordshire. With a background in catering she has developed a splendid little one-woman bakery with her distinctive and genuine loaves.
- Azelia’s Kitchen Blog Visit Azelia Torres and read her blogs on baking. A self-taught baker, Azelia has a penetrating ability to seek out the science that underpins fermentation, and what makes honest craft.
- Holtwhites Bakery, Enfield Proprietor and skilled baker, Richard Copsey came to PANARY courses, then invited me to do consultancy as he and wife, Kate, set up their superb craft bakery – bread, deli, and cakes. A natural searcher, Richard’s knowledge and skill have grown rapidly.
- Caroline’s Cakery Bakery Caroline Sheldon is an ex-student at PANARY courses, and recently engaged Paul for consultancy to trial bread products to be featured in the full-time version of her micro-bakery that is going into new premises in Tetbury.
