Changes:
* the two-day Italian
course has been absorbed into the increasingly popular Continental
course, which is a mixture of French and Italian breads.
* While the French
course and the Sourdough course still stand on their
own, the French course always features sourdough as part of its programme.
* Apprentice
Day has now become the PANARY Masterclass. Every Thursday I
am using Cann Mills flour to make bread for retail sale in local deli
shops and village stores. Trainee bakers are welcome to join me, experiencing
the tempo of proper bakery production and smartly gaining hand skills
on the table and oven. Hence a PANARY Masterclass is now happening every
Thursday. The fee is the same as the one-day course fee, £150,
and there is a sliding scale for “apprentices” who come for several
weeks in a row.
* The Bakers’
Tour in France occurs twice a year, in the lower season. It
is an observational tour of several bakeries and does not involve classes.
* Wood-fired Oven Workshops
are becoming increasingly popular, which reflects the growing interest
in masonry ovens shown by amateur household bakers as well as commercial
bakers. There is no masonry better than the French refractory masonry
in my Panyol wood-fired oven, for which PANARY is the
UK agent. Along with the themed wood-firing courses, the use of the
wood-fired oven can be requested on any two-day course.

Cann Mills
